A fortified dessert wine inspired by the method of making Port wines in the Porto region of Portugal. The wine is made from selected Cabernet Franc grapes, which have reached advanced ripening in the winery's organic vineyard. Fermentation is stopped by the addition of fine brandy and the source of the sugar in the wine is from the grapes themselves.
The wine was aged for over 10 years in old French oak barrels and bottles. The aging in barrels was done in an uncontrolled climate, the alternating heat and cold were very beneficial to the wine and contributed to its concentration and refinement, giving the wine a smooth texture and flavors of caramel, chocolate and ripe fruit.
The chutney is suitable as an aperitif or at the end of a meal as an accompaniment to fruit desserts, cakes and chocolate .
Nov Organic Vineyard - For many years, Betzer Yankela cultivated his vineyard for the Golan Heights Wineries. Then in 2011, he teamed up with Eitan Rosenthal, a graduate of the Faculty of Agriculture and a graduate of Nir Shaham's wine courses at Sorek Winery. Together they decided to produce wine from Yankela's organic vineyard. The winery's wines are produced from clusters that are harvested in a selective and meticulous hand harvest.
The advantages of organic farming are first and foremost preserving the environment, a pleasant working environment for vineyard workers, but above all, providing healthy, high-quality produce to health-conscious consumers.
