Eliad's olives are planted in an innovative way and are shaped with pruning and delia, with the aim of enabling harvesting using high-efficiency mechanical harvesters and without human contact. Thanks to this, the olives can be harvested at the optimal timing, at the stage of fruit ripeness, to produce high-quality olive oil.

The special combination of the high extraction capacity of the mechanical extractors, the location of the oil press near the vineyards (only ten kilometers away), and the high capacity of the oil retention system in the oil press, significantly shortens the time between olive harvesting and the oil storage stage in the tanks, to three hours. The time that passes between these stages is one of the most important indicators in determining the acidity level of the oil and its quality.

At Eliad Oil Press in the Golan, the olives are not forced to wait between stages throughout the process, and as a result, extra virgin olive oil is produced from them, through cold pressing and a single extraction, with a very low acidity level.

Eliad olive oil has a quality mark from the Olive Branch of the Plant Council.

The quality of olive oil is determined by its flavor, aroma, and acidity level. The flavor and aroma are determined by the olive variety from which the oil is extracted, the type of soil, and the climate. The acidity level is determined by the oil extraction process and the type of oil press.

Oil presses around the world are divided into two main types: three-stroke presses and two-stroke presses. In the first type of press, the olives are pressed and separated into oil, dry pomace, and water. In this method, water is added as part of the process, and this also "washes out" some of the flavors and aroma of the oil. In contrast, in the Eliad Oil Press in the Golan, a two-stroke press, the olives are pressed and separated into oil and wet pomace. This way, the oil retains its flavors and aroma, and the quality of the oil produced is higher.

Eliad Oil Mill in the Golan is equipped with advanced bottling machines made by the Italian Polaris, which allow bottling of bottles and cans of various shapes and sizes, containing between 100 milliliters and two liters. The main uniqueness of these bottling machines is expressed in the stage where the air is drained from the bottle and replaced with nitrogen gas, to prevent oxidation of the oil in the bottle.
